چکیده

Soluble fibre b-glucan is one of the key dietary materials in the healthy food products known for reducing serum cholesterol levels. The micro-structural heterogeneity and micro-rheology of high-viscosity oat b-glucan solutions were investigated by monitoring the thermally driven displacements of well-dispersed microspheres via video fluorescence microscopy. By comparing the distribution of the timedependent mean-square displacement (MSD) and ensemble-averaged MSD of polystyrene microspheres imbedded in four concentrations of b-glucan solutions, we found that the solutions exhibited perfectly homogeneous behaviour at 61%, but showed a certain degree of heterogeneity at 2%. Micro-rheology investigation revealed that b-glucan solutions displayed nearly perfect viscous behaviour at 61%, but the property changed into viscoelastic at 2%. Both micro-structural heterogeneity and micro-rheological property shifts occurred over a small concentration range, between 1% and 2%, of b-glucan. Published by Elsevier Ltd.

Impact of hydrothermal and mechanical processing on dissolution kinetics and rheology of oat β-glucan

Oat mixed-linkage β-glucan has been shown to lower fasting blood cholesterol concentrations due notably to an increase in digesta viscosity in the proximal gut. To exert its action, the polysaccharide has to be released from the food matrix and hydrated. The dissolution kinetics of β-glucan from three oat materials, varying in their structure, composition and degree of processing, was investiga...

Effects of Micro and Nano Sized SiC Powder on the Rheological Properties of Al Based Feedstocks for Low Pressure Injection Molding

This study investigates the effects of micro- and nano-sized SiC powder on the rheological behavior of Al based feedstocks for powder injection molding (PIM).  Different compositions of Al feedstocks with additions of micro and nano-SiC powder were prepared and their rheological properties were measured with a rotational rheometer. The effects of SiC content and shear rate were investigated and...

Effect of an oat beta-glucan-rich hydrocolloid (C-trim30) on the rheology and oil uptake of frying batters.

C-trim30, a new beta-glucan-rich hydrocolloid containing 32%beta-glucan, was obtained by steam jet-cooking and fractionating oat bran concentrates. It was then incorporated into batter formulations to investigate the rheological effects of C-trim30, which were correlated with batter attributes. In steady shear measurements, the use of C-trim30 led to the increase in batter viscosity, while it d...

Individual and interactional effects of β-glucan, starch, and protein on pasting properties of oat flours.

Seven experimental oat lines with high (6.2-7.2%), medium (5.5-5.9%), and low (4.4-5.3%) β-glucan concentrations were evaluated for contributions of β-glucan, starch, protein, and their interactions, to pasting properties of oat flours by using a Rapid Visco Analyser (RVA, Newport Scientific, Warriewood, NSW, Australia). Significant correlations (P < 0.05) between β-glucan concentration and pas...

Effect of Micro Glass Flake on Morphological and Rheological Behaviour of Epoxy Vinyl Ester Composite Coatings

In the present work, attempts were made to investigate the reinforcement and treatment effect of GF on morphological and rheological behaviour of GF/epoxy vinyl ester composites. GF was incorporated into epoxy vinyl ester resin by sonication, and mechanical agitation. Rheological and morphological properties were studied as a function of particle treatment and size distributions. The dispersion...
